The Story:
Ethiopia is the birthplace of coffee, and
many consider coffee from the Yirgacheffe region to be one
of the best and most exotic and distinctive coffees in the
world.
Grown in the highlands of Rift Valley Southern
Ethiopia, this coffee is wet processed (or "washed"),
which removes the fruit and softens the fruity and wine-like
profiles that embody most of the sun-dried (the coffee is
dried in the fruit) Ethiopian coffees.
The Rift Valley was formed from earthquakes
and volcanic activity, and the unique soil imparts a distinctive
floral bouquet, a rich body, a pleasingly fragrant aroma
with a smooth mellowness that's unique unto itself.
In the high altitude, warm African days are balanced by
cool nights. These cool nights keep the coffee cherries
from ripening too quickly, lengthening their maturity, and
helping give Yirgacheffe coffee its complex and smooth flavor.
Eighty five percent of the Yirgacheffe people
are farmers. Coffee from native stock has been grown in
these forests for generations in small garden plots. Ethiopia
ranks 2nd in African production and 7th in world production
of coffee.
